so the other day i was making Applesauce Breakfast Cake and i make it so often that i thought i should share it with you! this is really easy and it tastes really good. the recipe is actually from my 6th or 7th grade cooking class!
here's the recipe:
first you pre heat the oven to 350 degrees F and then in a small bowel mix 1/4 cup brown sugar, 1 tablespoon butter, and 1/2 teaspoon cinnamon (and 1/4 cup walnuts if you wish)
then in another bowel you mix 1 cup flour, 1/3 cup sugar, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, and a dash of salt
and you're supposed to do this in another separate bowel, but i think that's a waste of a bowel and more cleaning, so i just mix it with the dry ingredients. in the same (or separate bowel) mix 1/2 cup applesauce (which is actually a whole cup of the applesauce you normally eat)
may i also point out my stick on nail "polish"! it looks so real and it's holding on pretty well too!
anyway, along with the applesauce you mix, 1 egg, 1/4 cup of vegetable oil, and 1/2 teaspoon vanilla
it actually doesn't make many, so to fill all of these i had to make 2 batches
stick them on the middle (or closer to the top) rack of the oven
for 20 minutes
and then the worst part - cleaning up
aaaand i forgot to take a picture of the final result?? shoot. well they are really good and you can barely taste the applesauce, so i call it my secret ingredient ;) also, if you noticed, this was the first time i tried it as a muffin. it's supposed to be a cake! oh well, it's really good either way!
